YIAYIA'S GREEK TURKEY DRESSING 
2 stalks celery
2 to 3 onions
4 lbs. hamburger
4 to 5 cans chicken broth
1 c. chopped walnuts
1/2 c. pine nuts
15 to 20 chopped chestnuts
4 sm. boxes raisins
1/2 to 1 c. rice
Salt and pepper to taste
Italian seasoning
Garlic
Any other seasonings

Chop onions and celery. Brown in bottom of large cooking pan in oil. When browned, add hamburger (the leaner the hamburger the better). Season as you are adding the hamburger. It will be necessary to drain the excess fat out of the pan as you continue to cook the hamburger. Once all the hamburger has been added, add 2 cans of chicken broth, season again and let cook for approximately 30 minutes.

At that time, add walnuts, pine nuts, chestnuts (you prepare them by boiling chestnuts in their shell for 20 minutes; peeling them and chopping them); raisins and chicken broth. It will be necessary to keep tasting for seasoning.

Add another can of chicken broth and let simmer for at least 1 hour. As it cooks you can decide if you need to keep adding any more chicken broth. The longer you let this cook, the more flavor it receives. It is best to prepare this the night before. Store overnight in the refrigerator. This gives it even more flavor.
