PEANUT BUTTER - CARAMEL CRACKERS 
18 graham cracker squares
1/4 c. creamy peanut butter
2/3 c. packed brown sugar
1/3 c. butter
2 tbsp. milk
1/2 c. semi-sweet chocolate pieces
1/2 tsp. cooking oil

Butter bottom of 8 inch square microwave-safe baking dish. Spread peanut butter on one side of 9 of the crackers; top with second cracker. Arrange in single layer in baking dish; set aside.

Combine brown sugar, butter and milk in 1 quart glass mix'n pour bowl. Microwave HIGH for 1-1 1/2 minutes or until boiling, stirring once. Stir to dissolve sugar. Then microwave high 2 minutes. Pour over crackers; set aside. Combine chocolate pieces and oil in 1-cup glass measure. Microwave high, uncovered, for 1-11/2 minutes or until chocolate is melted, stirring once. Stir until smooth. Spoon over caramel layer; spread evenly. Cool until chocolate is set; cut into square. Makes about 20 bars, 125 calories.

TIPS: If desired, sprinkle chocolate with 1/3 cup chopped peanuts before cooling. When substituting chunky peanut butter, increase amount 1/3 cup. Received rave reviews at a recent carry-in dinner.

Since microwave ovens vary in power, you may need to adjust your cooking time.
