VERMICELLI WITH VEGETABLES | |
8 oz. vermicelli 2 tbsp. butter 1/4 c. olive oil 1 med. onion, sliced 2 med. zucchini, sliced 1/4 lb. snow peas 1/4 lb. mushrooms, sliced 1 tsp. sweet basil 1/4 tsp. garlic powder 1/4 tsp. pepper and salt 1/2 c. grated Parmesan cheese Heat butter and olive oil in large skillet. Add onion, zucchini, snow peas and mushrooms; cook until just tender. Stir in spices. Cook vermicelli in boiling salted water until just done. Drain. Add to vegetables. Heat 2 to 3 minutes. Turn into large serving dish. Sprinkle with cheese. Makes 4 servings. |
