SOFT PRETZELS 
1/8 c. hot water
1 pkg. dry yeast
1 1/3 c. warm water
1/3 c. brown sugar
5 c. flour
Kosher salt
3 to 4 c. water
3 to 4 tsp. baking soda

Preheat oven to 475 degrees. Dissolve yeast in hot water. Stir in warm water and brown sugar. Slowly add flour until smooth. Place dough on lightly floured pastry board, knead with floured hands. Grease 2 cookie sheets. Sprinkle with salt. Pinch off a bit of dough and roll to about 12-14 inches in length. Shape into pretzel.

In a large saucepan bring 3-4 cups water to a boil with baking soda, a gentle boil. Boil 30-40 seconds. Remove to salted sheets. Bake 8 minutes.
