"LEMON CHICKEN BREASTS" 
1/4 c. butter
1/4 c. baking mix (Jiffy or Bisquick) or flour
1/4 tsp. salt
1/8 tsp. paprika
Dash of pepper
2 tbsp. lemon juice
1 tbsp. water
1 tbsp. parsley flakes
4 chicken breasts, boned & skinned
Hot cooked rice or noodles

Place butter in square microwavable dish. Microwave uncovered on HIGH until melted, 45 to 60 seconds. Stir in baking mix, salt, paprika and pepper until smooth. Stir in lemon juice, water and parsley. Dip chicken into this mixture to coat. Place chicken in dish with thickest parts to outside. Cover with vented plastic wrap and microwave on HIGH 8 minutes. Turn chicken over. Cover and microwave until done, 4 to 6 minutes longer. Serve with rice or noodles. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
