BANANA FRITTERS 
1 1/4 c. sifted flour
1/2 c. sugar
1 1/4 tsp. salt
2 tsp. baking powder
1 egg, beaten
1/3 c. milk
2 tsp. melted shortening
4 med. bananas

Sift 1 cup flour with sugar, salt and baking powder. Mix egg and milk and add to flour mixture, gradually stirring until smooth. Add shortening.

Cut bananas crosswise in halves. Roll in remaining flour, then cover with batter and fry in cooking oil 4-6 minutes. Roll in powdered sugar. Serves 8 for a unique breakfast treat. Best when warm.
