BANANA FRITTERS 
2 c. flour
1 tbsp. baking powder
1/2 tsp. salt
2 eggs
1 1/2 c. milk
6 tbsp. white sugar
6 tbsp. brown sugar
4 lg. bananas
1 tsp. banana extract

Sift dry ingredients together, add eggs and milk; beat until batter is smooth. Add mashed bananas and extract and blend thoroughly. Drop by teaspoon into hot fat in skillet at 350 degrees - cook approximately 5-7 minutes on each side. Glaze with thin powdered icing. Dip and dry on wire rack.
