BANANA FRITTERS 
2 eggs, separated
1 c. flour
1 tbsp. lemon juice or wine
5-6 bananas
1/4 c. lemon juice
1/2 c. water
1 tbsp. melted butter or oil
1/4 tsp. salt
Flour
1/2 c. sugar, powdered

Peel and cut banana lengthwise, then in half. Beat the egg yolks until light yellow. Add water and stir in flour.

Combine lemon juice and melted butter or oil and blend into batter mixture. Beat egg whites until stiff and add salt. Fold into batter. Dip each banana slice into batter. Lift out with fork and fry in deep fat until a delicate brown on both sides. Drain on paper towels and serve with lemon juice and powdered sugar.
