BAKED ZUCCHINI 
2 lg. zucchini squash, cut open lengthwise
1/2 lb. lean ground beef
5 saltine crackers
1 onion, chopped fine
2 slightly beaten eggs
2 tbsp. chopped green pepper

Scoop out as much of the squash as you can out of the 2 squashes and mix with the rest. Mix and stuff squash. Bake in slow oven for 1 hour at 350 degrees.
