BUTTERNUT CASSEROLE 
3 c. cooked, mashed butternut squash
1/2 c. chopped onion
2 tbsp. butter
2 1/2 c. herb seasoned croutons
1/2 tsp. salt
1/4 tsp. pepper
1 c chicken broth
1 1/2 c. cooked, cubed chicken or turkey
1/2 c. shredded sharp American cheese

Saute onion in butter until tender. Stir in croutons, salt and pepper. Add broth and toss. Combine croutons mixture with squash and chicken. Bake in 350 degree oven for 30 minutes. Sprinkle with cheese and bake an additional 15 minutes.

Casserole can be frozen and baked later. Bake frozen casserole at 400 degrees for 1 hour. Top with cheese and bake additional 15 to 20 minutes.
