FRUIT PIZZA 
2 (20 oz.) refrigerated sugar cookie rolls
1 (8 oz.) cream cheese, softened
1/3 c. sugar
1 tsp. vanilla
apricot preserves
fruit (strawberries, kiwi, bananas, grapes, chunk pineapple or any other fruit you desire)

Roll sugar cookie dough onto 2 pizza pans.

Bake each for 10 to 12 minutes. Cool completely. Mix together cream cheese, sugar and vanilla. Spread onto cooled sugar cookie crust. Top with sliced fruit.

Glaze:

1/2 jar apricot preserves
2 tbsp. water

Mix together and brush over top of the fruit.
