8 eggs 3 c. sugar 1 1/2 c. butter 4 1/2 c. plain flour 1 1/2 c. buttermilk 1 1/2 tsp. baking soda 2 tsp. cinnamon 2 tsp. cloves 2 tsp. allspice 1 1/2 c. raisins 1 1/2 c. pecans 1 1/2 c. blackberry jam Cream eggs, sugar and butter until creamy. In another bowl, measure flour, spices, raisins and nuts. Mix until well coated. To the creamed mixture, add the buttermilk and soda. Stir the soda into the buttermilk first. Stir well. Then add flour, nuts, raisins and jam. Mix well. Bake in 10-inch tube pan that has been greased and dusted with flour at 325°F for 2 hours or until well done. |
