MINI CHEESE CAKES 
2 pkgs. or 16 oz. cream cheese, softened
1/2 c. sugar
1 can pie filling, any flavor
12 vanilla wafers
2 eggs
1 tsp. vanilla

Preheat oven to 375 degrees. Place paper liners in muffin tin and put on vanilla wafer in bottom. USING A BEATER: Blend cream cheese, eggs, sugar and vanilla until creamy. Fill tins full using only 12 muffins.

Bake 15 minutes. Let cool 1 hour, then chill until firm. After chilled, put 1 teaspoon pie filling on top of each. Makes 12 servings.
