BLUEBERRY MUFFINS 
1 egg
3/4 c. milk
1/2 c. vegetable oil
2 c. all purpose flour or whole wheat
1/3 c. sugar
3 tsp. baking powder
1 tsp. salt
1 c. fresh blueberries

Beat egg; stir in milk and oil. Stir in remaining ingredients all at once (except berries) just until flour is moistened (batter will be lumpy). Add berries. Fill greased muffin tin 3/4 full. Bake until golden brown (approximately 20 minutes) at 400 degrees. Immediately remove from pan. Yields 1 dozen.
