LEMON NUT BREAD | |
2 1/2 c. whole grain flour 1 c. honey 3 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 c. water 1/3 c. butter, melted 2 eggs, beaten 1 1/2 tbsp. lemon peel, grated 1/2 c. lemon juice 1/2 c. nuts, chopped 1/2 c. raisins In large bowl sift together dry ingredients. Add honey. Now combine water, butter, eggs, lemon peel and lemon juice; add to flour mixture. Stir just until blended. Stir in nuts and raisins. Pour into oiled 9x5x3-inch loaf pan. Bake at 350 degrees for 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan and cool on wire rack. |
