APRICOT CHICKEN 
1 chicken, cut up
1 box UNCLE BEN'S® minute wild rice
1 (12 oz.) can Kerns apricot nectar
1 lg. can or 2 sm. cans apricots
Salt and pepper

Brown chicken pieces. Prepare rice according to directions. Open can and drink 1/2 cup of apricot juice, the remaining 8 ounces is for recipe.

Line 8x10 baking dish with the prepared rice. Then arrange chicken pieces. Arrange apricot halves around the chicken. Pour apricot nectar over all. Salt and pepper if you like. Bake at 400 degrees for 1 hour. Add fresh green salad and rolls and you have a yummy easy dinner.
