CHEESE PINWHEELS 
2 c. flour
2/3 c. shortening
1 tsp. salt
4 tbsp. cold water

Mix flour, shortening and salt together with pastry blender until it resembles coarse meal. Add water and mix to form a ball. Refrigerate until ready for filling.

FILLING:

2 parts cream cheese
1 part Roquefort cheese
1 tbsp. sherry

Let cheeses come to room temperature and combine. Add sherry and mix to blend well. Roll dough into rectangles, approximately 8 x 10 inches. Spread with filling. Roll up jelly roll fashion. Chill. Slice into 1 inch slices and bake on greased pan in hot oven (425 degrees) for 10 minutes. The rolls may be frozen before baking, sliced or unsliced, then baked without defrosting at 425 degrees for about 10 to 15 minutes.
