COTTAGE CHEESE PINWHEELS 
1 pkg. compressed yeast
1/4 c. warm water
2 1/2 c. flour, sifted
1/4 c. sugar
1/2 c. butter
1 (12 oz.) carton cottage cheese
1 egg
1 tsp. salt

Dissolve yeast in warm water. Sift flour, sugar and salt together. Cut in butter until mixture resembles fine meal. Add cottage cheese, egg and dissolved yeast; mix well. If necessary, add more flour to make dough that can be handled. Roll on lightly floured surface to a 14-inch square. Spread filling on dough and roll up jelly roll fashion. Cut into 18 slices. Let rise until doubled in bulk. Bake at 375 degrees for 20 to 25 minutes.

FILLING:

3 tbsp. melted butter
1/4 c. brown sugar
1/2 tsp. vanilla
2/3 c. chopped nuts

Combine all ingredients, mixing well.
