COTTAGE CHEESE PINWHEEL ROLLS 
1 pkg. yeast (dry or compressed)
1/4 c. water (warm for dry - lukewarm for compressed)
2 1/2 c. sifted flour
1/4 c. sugar
1 tsp. salt
1 egg, beaten
1/2 c. butter
1 (12 oz.) carton creamed cottage cheese

Dissolve yeast in warm water; sift flour, sugar, and salt together in mixing bowl. Cut in butter until mixture resembles fine meal. Add cottage cheese, egg, and dissolved yeast; mix well. Add more flour if necessary for easier handling. Roll out to a 14 inch square. Spread the following filling over dough.

FILLING:

3 tbsp. melted butter
1/4 c. brown sugar
1/2 tsp. vanilla
1/2 tsp. almond extract
2/3 c. chopped nuts

Sprinkle over dough. Roll up jelly roll fashion. Cut into 18 slices. Place on greased baking sheet and let rise. Bake 20 to 25 minutes at 375 degrees. Glaze with thin frosting while still warm.
