COTTAGE ROLLS 
2 pkg. yeast, dissolved in 1/2 c. warm water
5 c. flour
1/2 c. sugar
1 1/2 tsp. salt
1 c. butter
12 oz. cottage cheese
2 lg. eggs

Mix flour, sugar, salt, and butter like pie crust. Add dissolved yeast, cottage cheese, and eggs. Knead on floured board a little; let rest 10 minutes. Divide dough in half. Roll out and spread with filling.

FILLING:

1 1/2 c. brown sugar
1/2 tsp. salt
1 tsp. almond extract
1 tsp. vanilla extract
1 1/2 c. chopped nuts (very fine)
6 tbsp. melted butter

Roll up cinnamon roll style. Cut in slices. Place on greased sheet. Let rise until light. Bake at 375 degrees for 15-20 minutes. Drizzle with powdered sugar icing like a glaze.
