JENNIFER'S BANANA BREAD | |
2 c. sifted flour 2 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. salt 1/2 tsp. ground nutmeg 1/2 c. shortening 1 c. sugar 2 eggs 1 tsp. vanilla 1 c. mashed bananas 1/2 c. chopped pecans 6 tbsp. flour Sift together 2 cups flour, baking soda, cinnamon, salt and nutmeg. Cream together shortening and sugar. Blend in eggs and vanilla; mix well. Add dry ingredients alternately with bananas, mixing just until blended. Combine pecans and 1 teaspoon flour; stir into batter. Pour into greased 9-inch tube pan. Bake in 350 degree oven 45-50 minutes or until breads test done. Cool in pan on rack 10 minutes. Remove from pans and cool on rack. Makes 1 loaf. |
