PEACH BLOSSOM PIE 
3 or 4 peaches
Unbaked 9-inch pie shell
2 eggs, beaten
1 c. milk
3/4 c. sugar
1 tbsp. flour
Pinch of salt
Few drops almond extract

Arrange peach slices on bottom of pie shell. Beat eggs, stir in flour and sugar; add milk, salt and almond extract. Pour mixture over peaches. Bake in hot oven 10 minutes at 400 degrees. Reduce heat to 325 degrees, baking 30 or 40 minutes longer until knife comes out clean.

My paternal grandmother had this recipe and made it often. I loved it so much as a child, that my own mother made it for me every year through my 40's instead of a birthday cake!

I've made this pie for years and love it. But I use peach halves rather than slices. Also, white peaches are sweeter than yellow.
