SWISS STEAK 
2 lbs. round steak, cut 1/2 inch thick
All-purpose flour
3 to 4 tbsp. vegetable oil
Salt and pepper to taste
1 lg. onion, chopped
1 lg. green pepper, chopped
1 c. celery, chopped
2 (16 oz.) cans tomatoes, diced
2 tbsp. all-purpose flour
3 tbsp. water

Heat oven to 350 degrees. Cut meat into serving pieces; dust with flour. Put oil in a heavy skillet and saute meat over high heat until brown. Add salt and pepper. Transfer to a 3 quart baking dish. Add vegetables; cover and bake for 3 hours or until meat is very tender. Place the meat in a serving dish; keep warm. Put vegetables back in skillet. Mix flour and water and add to vegetables; stir and cook 3 to 4 minutes. Pour overnight.
