APPLESAUCE COOKIES 
2 tbsp. butter, softened to room temperature
1/2 c. sugar
1 egg, lightly beaten
1 c. packaged biscuit mix
1/2 c. applesauce
1 tsp. finely grated lemon rind
1 1/2 tsp. caraway seeds (optional)

Preheat oven to 375 degrees. Cream butter well with sugar and egg; mix in remaining ingredients until smooth. Drop from a teaspoon 2 inches apart on well-greased cookie sheet and bake 8 minutes until golden around the edges. Transfer at once to wire racks to cool. 50 calories per cookie.

NOTE: Since these cookies brown nicely on the underside but not on top, they are more attractive served bottom side up.
