AU GRATIN POTATOES 
5 lb. potatoes, peeled and sliced thick

Boil in salted water for 20 minutes; drain.

CHEESE SAUCE:

In saucepan melt 1 stick butter; stir in 1/4 cup flour. Add approximately 1 quart milk. Cook until thickened. Add 1/4 pound Velveeta cheese, 1 cup cheddar cheese and 1 minced onion. Stir until cheese melts. In large baking dish, alternate layer of potatoes and cheese sauce ending with sauce. Sprinkle some cheddar cheese across top. Cover and bake about 1 hour until bubbly at 350 degrees. Take cover off and brown lightly.
