SWEET POTATO MALLOW 
1 lb. sweet potatoes or yams (about 3 medium)
1/2 c. dairy sour cream
1 egg yolk
1/2 tsp. salt
3/4 c. miniature marshmallows

Prepare and cook sweet potatoes until tender. Slip off skins.

Beat sweet potatoes, sour cream, egg yolk and salt in small mixer bowl on medium speed until smooth. Pour into buttered 1-quart casserole; top with marshmallows. Cook uncovered in 350 degree oven until marshmallows are puffed and golden brown, about 30 minutes.

I tried this recipe because I was tired of using canned yams and marshmallows to make make my 'sweet potato' dish and noone in my family would eat them. (That's how my aunt taught me for some reason) But when I used this recipe to make it from scratch, everyone loved them. They're not too sweet and the sour cream adds a nice touch!
