Cook 1 cup rice (makes 2 cups). Cut up 2 cups of chicken or turkey in cubes. Saute 1 tablespoon onion and 1 cup of cut up celery in butter. Mix together with 1 can undiluted cream of chicken soup, 3/4 cup mayonnaise, 1 teaspoon lemon juice, salt to taste. Add 1/2 cup sliced water chestnuts. Put in buttered casserole dish and top with crushed corn flakes or Rice Krispies with 1/2 cup sliced almonds. Sprinkle with melted butter.
This can be made ahead of time but keep topping off until ready to bake.
