YELLOW HOT SAUCE (AJI AMARILLO) 
2 or 3 frozen yellow Peruvian hot peppers, chopped
1/4 red onion, chopped
1/2 tsp. salt
1/3 tsp. black pepper
1/4 cup vegetable oil

Place the Peruvian peppers and onion in small pot and set it on high. Then add salt and black pepper. Wait for 5 minutes or until Peruvian peppers and onions are browned. Place in blender and while blending add oil. Make sure to not add too much oil or salt as it will alter taste.

Serve with any dish. It is also great with meats. It is able to be cooled and stored in the refrigerator for 2 to 3 days. ENJOY!
