PORKY'S GARBAGE CAN DINNER | |
24 (6 oz.) pkgs. pork sausage (smoked) 24 corn on the cob 8 (3 lb.) heads cabbage 10 lbs. med. potatoes 10 lbs. carrots 6 lbs. rutabagas 8 med. onions Clean vegetables. Leave potatoes, carrots, and onions whole. Cut cabbage into wedges and rutabagas into chunks. Prick casing on sausage to prevent splitting while steaming. Put all ingredients in garbage can and steam for 2 1/2 to 3 hours. Remember that vegetables are at their peak nutritional value when served a little on the crunchy side. Serves 24. Start charcoal a half hour ahead of time. When the flame dies down, set can No. 1 inside of can No. 2. Fill the empty vegetable cans with water and also the bottom of the garbage can up to the rack. Cover until it boils. Add all ingredients and steam 2 1/2 to 3 hours. CHEESE SAUCE: 1 can Cheddar cheese soup 1/3 c. milk 1 tbsp. onion 1/4 tsp. poultry seasoning Heat all ingredients in microwave for 3 minutes. Serve over vegetables. You will need 4 recipes to serve 24. DIRECTIONS FOR GARBAGE CAN COOKWARE: Prepare Can No. 1: Solder all seams to prevent leaking. Fill bottom with clean, empty No. 2 vegetable or fruit cans. Put a BBQ rack on top of cans. Fill cans and bottom of garbage can with water up to the rack. Your vegetables and sausage will be placed on the rack. Prepare Can No. 2: Cut out bottom. Attach three legs of 3/4 inch pipe to inside of can. Flat washers welded to bottom of legs will help stabilize can. Use a metal fire pot at least 4 inches deep and place in can. Legs will support fire pot. Fill fire pot with charcoal and light. When flame dies down, put can No. 1 inside of can No. 2. Cover can No. 1. When water begins to boil, add vegetables and sausage and steam 2 1/2 to 3 hours. Can No. 1 will work equally as well over an open pit. If you happen to have a "Garbage Can Dinner" at the lake or in a park where open pits are available, you will only need can No. 1. This is a great party idea for all ages - 4-H party, Sunday School picnic, after a softball game, swimming, water skiing, or for fun. Your guests will be delighted. |
