Mix 2 beaten eggs and 3 tablespoons dry sherry. Combine 3/4 cup sugar, 4 teaspoons flour and 1/4 teaspoon ground nutmeg; stir into egg mixture. Stir in 3/4 cup ground almonds. Roll Rich Pastry (recipe follows) 1/8" thick and cut 24 (2 1/2 inch) circles; fit into 1 3/4 inch muffin pans. Spoon dot of raspberry, strawberry or plum jam into each shell; pour egg mixture atop. Bake at 350 degrees until wooden pick comes out clean, 23-25 minutes. Makes 24.

Rich Pastry: Stir together 1 cup all-purpose flour, 1 tablespoon sugar and 1/4 teaspoon salt. Cut in 1/4 cup butter until mixture resembles small peas. Using 1/4 cup milk, sprinkle 1 tablespoon milk at a time over part of mixture. Toss with fork; push to side. Repeat until all moistened; form into a ball.
