ZUCCHINI PANCAKES 
2/3 c. Bisquick baking mix
1/4 c. butter, melted
1/8 tsp. garlic salt
2 eggs
3 c. shredded zucchini
1/4 c. thinly sliced green or yellow onion

With whisk, beat baking mix, garlic, salt and eggs until blended. Stir in zucchini and onions. Grease heated griddle. For each patty, spoon scant 1/4 cup batter onto griddle. Cook patties until dry around edges, flip and cook on other side. Top each patty with sour cream and green onions, if desired. 8 to 12 servings.
