ORANGE ALMOND SALAD 
1/4 c. oil
1 tbsp. sugar
2 tbsp. cider vinegar
1/4 tsp. salt
1/8 tsp. almond extract
2 tbsp. sliced scallions
2 sm. cans mandarin oranges
1/3 c. sliced, toasted almonds
1 head Romaine lettuce or leaf lettuce (or combination of both)

Drain oranges well. Mix sugar, vinegar and almond extract until sugar is dissolved and pour over oranges. Let stand for 2 hours or more. Toast almonds until brown. Wash and dry lettuce. Just before serving, combine oil, salt, scallions, almonds, lettuce and orange mixture. Toss well. Serves 8.
