CHEESY POTATO PUFF 
6 lg. potatoes (can use leftover mashed potatoes)
1/2 c. milk
1/4 c. butter
2 beaten eggs
1 tsp. salt
Pepper to taste
2 tbsp. minced onion
1 1/2-2 c. grated cheddar cheese

Boil potatoes until tender. Drain and mash. Beat in milk, butter, salt, pepper and onion. Whip until smooth. Add beaten eggs and cheese. Pour into a buttered casserole dish. Bake at 350 degrees for 40-45 minutes.
