CRUNCHY POTATO PUFFS 
without any butter or milk yet

OR if pressed for time mashed potatoes (5 serving packet) 1 c. water 1/2 c. milk

Begin with either of the above cooked potatoes and continue with the following: 2 oz. cream cheese, softened 1 tbsp. butter, softened 1 tbsp. chopped green onion or fresh chives 1 tbsp. beefy onion dry soup mix Dash pepper Dash hot pepper sauce 2 tbsp. milk

Thoroughly mix the above ingredients into the hot potatoes; cool to make handling easier.

COATING:

1 egg
2 c. crushed cornflakes

While mixture is cooling, beat 1 egg. Crush cornflakes. Shape potato mixture into 1/2 cup size serving balls or puffs. Dip each puff into the egg and roll in the crumbs.

Just before serving, place puffs on a slightly greased sheet; heat in 400 degree oven for about 15 minutes.
