MUSTARD CHICKEN 
4 to 6 Market Day chicken steaks
Freshly ground pepper
1/4 c. salad mustard
1/4 c. Dijon mustard
2 tbsp. brown sugar
1 garlic clove, minced
Bread crumbs
1/2 tsp. dry mustard
Nonstick cooking spray

Preheat oven to 400 degrees. Sprinkle chicken with pepper. Spray shallow baking pan with nonstick spray, add chicken and bake 10 to 15 minutes. Combine mustard, sugar, garlic, dry mustard and blend well. Paint one side of chicken with mixture, sprinkle with bread crumbs, bake 10 minutes. Turn pieces over, coat with mustard and bread crumbs, bake another 10 minutes. Serves 4 to 6.
