CURRIED SHRIMP 
1 tbsp. butter/cooking spray
1 onion, chopped
1 can cream of shrimp soup
2 tsp. curry powder
1 lb. frozen shrimp, thawed
1/2 - 1 c. sour cream
1 tbsp. chopped scallions

Saute onion; stir in soup and curry powder. Add shrimp; heat over low heat. Fold in sour cream. Heat but do not boil. Sprinkle with scallions. Serve over rice.
