LEMON MERINGUE PIE | |
1 1/2 c. boiling water Juice of 2 lemons & grated rind of 1 1 c. sugar Yolks of 3 eggs 4 tbsp. flour or 2 tbsp. cornstarch 2 tbsp. butter Prepared baked single crust for pie Beat egg yolks slightly. Add sugar, flour and boiling water. Cook mixture until thick. Add butter. Pour into baked pie crust. Beat egg whites until stiff. Add 2 tablespoons sugar. Spread on pie and return to oven, 350 degrees for 8 to 10 minutes until meringue is golden brown. |
