OATMEAL SPICE CAKE 
1 1/4 c. hot water
1 c. quick oatmeal
1/2 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon

TOPPING:

1 stick butter
1 tbsp. milk
1 c. brown sugar
1 c. coconut
1 c. chopped nuts

Pour hot water over oatmeal and set aside. Cream shortening, sugar, and eggs. Add dry ingredients and oatmeal mixture. Bake 35 minutes at 350 degrees. Remove from oven and cover with topping which has been prepared by boiling butter, milk, and brown sugar for 2 minutes, then add coconut and nuts. Return to oven and brown for 10 minutes.
