OATMEAL YOGURT CAKE 
1 packed c. light brown sugar
1/2 c. melted butter
2 eggs
2/3 c. firm yogurt
1/2 tsp. vanilla extract
1 c. unbleached white flour
1 c. whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. nutmeg
1/4 tsp. ground ginger
1 1/2 c. raw rolled oats
1/2 c. fresh squeezed orange juice
Optional: 1/2 c. dark raisins

Preheat oven to 350°F.

In a large mixing bowl combine brown sugar and melted butter. Beat well. Add the eggs, one at a time, beating very well after each. Beat in the yogurt and vanilla until well blended.

Sift together flours, baking soda, powder, salt and spices. Add half the flour mixture and all the oats to the butter mixture. Stir until well mixed.

Add half the orange juice, stir. Alternately add remaining flour mixture and orange juice and stir just enough to blend after each addition. Add raisins with last bit of orange juice.

Turn into a well buttered 9x13 inch oblong pan. Spread into place, and bake until a knife comes out clean (30-45 minutes).
