EASY CARROT CAKE 
2 c. sugar
4 eggs
1 c. oil

Cream together. Add: 2 tsp. cinnamon 2 tsp. baking soda 1 tsp. salt 1 tsp. vanilla 3 sm. strained carrots (baby food) 1 c. nuts (chopped) 1 c. raisins

Mix all ingredients together. Bake in 350 degree oven in 9 x 12 baking pan for 45 minutes to 1 hour.

Frosting:
4 oz. cream cheese (softened)
1/4 c. butter
1/2 tsp. vanilla
1 3/4 c. powdered sugar

Blend together and spread over the top of the cake.
