RED BEANS 
2 c. red beans
1/2 lb. hot link sausage
1/2 c. diced ham
1 tbsp. shortening
1 lg. onion, chopped
1 green pepper, chopped
1 tsp. finely chopped hot red or green chili pepper
1 clove garlic
1 tsp. Worcestershire sauce
1 bay leaf

Soak red beans in water overnight. Brown sausage and ham in shortening. Remove meat from pan and saute onions, green pepper, chili and garlic in drippings. Add beans and remaining seasonings and enough water to cover beans. Simmer on low for 1 1/2 to 2 hours. Stir occasionally to prevent sticking. Add salt and pepper. Serve over hot rice.
