APPLE CAKE 
2 c. flour
1 tsp. baking soda
2 c. brown sugar
1 tsp. vanilla
1 tsp. salt
1 tsp. cinnamon
2 eggs
1 c. oil
3 c. apples (cut up, unpeeled)

(Pippin apples are best in this recipe.)

Blend sugar and eggs. Add oil and vanilla and mix well. Sift flour and other dry ingredients and add to sugar mixture. Add chopped nuts (1 cup) and apples.

Pour into a greased 9x12 inch floured pan. Bake at 300 degrees for 1 hour or until done (when cake pulls away from sides of pan). Serve hot or cold with ice cream or Dream Whip. Will keep moist for days if kept covered.

ICING: (If desired)
Powdered sugar
2/3 c. butter
Condensed milk
1 tsp. maple or vanilla flavoring
