DELICIOUS APPLE CAKE 
2 c. sugar
2 eggs
1 c. oil
2 c. flour
2 c. chopped unpeeled red apples
1 c. chopped nuts
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla

Mix 1 cup oil, with eggs and sugar, in mixer until smooth. Sift dry ingredients together, and add to first mixture. Add apples and nuts, and batter will be very stiff. Grease and flour Bundt pan. Bake for 65 to 70 minutes at 350 degrees. Turn out on rack to cool. Will keep for weeks in refrigerator or freezer.
