PEACH COCONUT SALAD 
2 tbsp. lemon juice
2 tbsp. water
1/4 tsp. almond extract
3 c. fresh cubed, unpeeled peaches
1/2 c. chopped, pitted dates
1/2 c. broken pecans
1/2 c. shredded, unsweetened coconut
1/4 c. yogurt (soy yogurt as alternative)
2 tbsp. honey

Mix together the lemon juice, water and almond extract. Add peaches and toss until all cut sides of peaches are coated with lemon juice mixture. Add dates, pecans and coconut.

Mix together the yogurt and honey until smooth and fold gently into fruit mixture. Chill well before serving. Serves 6 to 8.
