PINEAPPLE COCONUT SALAD 
1 c. coconut
1 lg. can pineapple chunks in heavy syrup
1 egg
1 tbsp. cornstarch
4 tbsp. sugar
1/2 pkg. coconut

Take juice from pineapple. Beat egg and sugar together. Have cornstarch thinned with water. Heat juice and add mix. When thick, pour over pineapple mixed with 1/2 pkg. coconut. Sprinkle the rest of coconut over top of salad.
