CHICKEN BREAST WITH MUSHROOMS 
1 whole chicken breast
Salt and pepper
Vegetable cooking spray
1 tbsp. low-cal butter
1/4 c. red onion, chopped
1 c. mushrooms, sliced
1/2 tsp. rosemary
1/4 tsp. thyme
Paprika
1/4 c. sparkling white grape juice
1 tsp. parsley, minced

Separate chicken breasts in halves. Sprinkle lightly with salt and pepper. Spray a nonstick skillet with cooking spray. Add butter and heat. Add onions and cook until tender. Add chicken and saute two minutes on each side, until browned. Add mushrooms, rosemary, and thyme; toss for a minute or two. Sprinkle with paprika. Add grape juice, lower heat, cover pan and cook for additional 20 to 25 minutes, until chicken is tender. Makes two servings. Calories per serving 198.
