MINIATURE CHEESECAKES 
2 (8 oz.) pkg. cream cheese (softened)
2 eggs
1/2 c. sugar
2 tsp. vanilla
Vanilla wafers
1 can pie filling (cherries, pineapple or blueberry)

Beat all ingredients together with electric mixer. Place vanilla wafer in foil paper cups. Fill 1/2 full with cream cheese mixture.

Bake 10 to 15 minutes at 350 degrees.

Top cooled cheesecakes with pie filing.

Hint: Place foil cups on cookie sheet instead of in cupcake tins - cookie sheets hold more.
