BEEF JERKY 
1 1/2 lbs. Swiss steak
1/4 c. soy sauce
1/4 c. Worcestershire sauce
1/4 tsp. liquid smoke
1/3 tsp. garlic powder
1/3 tsp. pepper
1 tsp. onion powder
1 tsp. monosodium glutamate

Trim fat off meat. Slice 1/8 inch thick. Arrange in 9 x 13 x 2 inch glass baking dish. Combine soy and Worcestershire sauce, liquid smoke, garlic and onion powder and monosodium glutamate. Pour over meat and marinate overnight in refrigerator. Drain meat well on paper towels, patting dry.

Place foil until oven rack and place meat strips in single layer on oven rack so they don't touch. Roast at 125 degrees for 8-10 hours. If possible leave door of oven slightly open.
