MARINATED VEGETABLE SALAD 
1 c. broccoli flowerettes
1 c. carrots, sliced
1 c. cucumber slices
1 c. celery, diced
1 med. tomato, cubed
1/4 c. red vinegar
2 tbsp. olive oil
1 tsp. celery seed
2 tbsp. fresh sweet basil, chopped
3 c. iceberg lettuce, torn

Combine vegetables in a medium bowl. Combine vinegar, oil, celery seed, and basil in a small bowl; mix well. Pour over vegetables. Cover and refrigerate 1 hour. Place lettuce in large bowl. Combine vegetable mix with lettuce and toss lightly. Serve immediately.
