BOW-TIE PASTA WITH TOMATO PEPPER
SAUCE
 
1 c. peeled, chopped fresh tomatoes (or plum tomatoes)
1/4 c. chopped green bell pepper
2 tbsp. water
2 tbsp. tomato paste
1 tbsp. minced fresh basil
1 clove garlic, minced
1 tbsp. minced onion
1/8 tsp. pepper (freshly ground is best)
2 c. cooked bow-tie pasta
1/4 c. Parmesan cheese

Combine first 8 ingredients in a small saucepan; cook over low heat for 10 minutes or until hot. Stir occasionally.

Combine tomato mixture and pasta in bowl, add cheese and toss or just serve with tomato mixture on top and sprinkle with cheese.
